Few other environments have such strict hygiene requirements as a high-end restaurant kitchen. SCA is proud to supply the Tork Elevation range of hygiene solutions to one of the world’s most prominent kitchens – Restaurant Geranium in Copenhagen, Denmark.
Geranium is one of Denmark's most exclusive eateries, and a business partner to Tork since 2010. Head chef and co-founder Rasmus Kofoed has participated in the prestigious Bocuse D'Or world championship in cooking three times, taking home the coveted gold medal in 2011. In addition, partner Sören Ledet was named best waiter in Europe at the Coupe Baptiste awards in 2012.

Located on the 8th floor of Copenhagen’s Parken Stadium, Geranium blends culinary diversity with stunning views of the city. Likewise, the restaurant’s guests can enjoy breathtaking interior views too: one of the restaurant’s stand-out features is a massive glass wall separating the restaurant from the kitchen area – setting the highest of standards in restaurant hygiene and conveying supreme confidence in food preparation.
"Our highest priority is that our guests enjoy themselves and have a good time – in this sense, the expectations on a high-end restaurant are much greater. Our job is to make sure that we have good, knowledgeable personnel who genuinely care about the hygiene of our guests, and to make sure they have the right tools and surroundings to do this." explains partner Sören Ledet.

In most restaurants, consumers don’t have much of a chance to judge food handling practices – but Geranium’s glass wall gives the guests a clear view of what happens in the kitchen.
"The wall allows our customers to see the world through the eyes of the chef. And of course, our guests see that we work systematically with food preparation and have a high-quality, hygienic kitchen. Our kitchen routines are transparent and all details that constitute the workspace have been optimally designed to deliver on high expectations in terms of both hygiene and quality."
No room for mistakes

"For a high-end restaurant, there is no room for mistakes. Our designers were responsible for choosing the hygiene equipment – in this sense it is particularly important to hire designers that understand not only the basic workings of a kitchen but also the finer issues such as hygiene routines. The designers took all of these factors into consideration when designing the kitchen setting, the choice of supplier and the positioning of the hygiene facilities."
